The beans - also Giganden, Yiganden, elephant beans or butter beans - can be replaced by lima beans. The Turkish version uses red beans.

INGREDIENTS
1. Soak the beans overnight in plenty of water. Drain and wash, add up to a large pot, and cover water up to about 1 inch. Boil to the boiling point, reduce the heat to a stew, cover and boil until the beans are cooked from the 30 to 40 minutes.
