- Ingredients:
- 3 lbs raw turkey thighs or drumsticks
- 3 carrots, peeled and chopped
- 3 celery sticks, washed and chopped
- 2 onions, halved
- 4 garlic cloves
- 1 tablespoon fresh corn
- 2 bay leaves
- 16 cups water
- Gravy:
- 1/4 cup salted butter
- 1 onion, chopped
- 1 carrot, chopped
- 1 tablespoon cayenne pepper
- 1/2 cup all purpose flour
- 2 cups frozen peas
- 1 pkg (397g) frozen puff pastry, thawed
Cookware:
- Stock pot
- Large pot
- Large plate
- Large deep skillet
- Large casserole dish
- Chef's knife
- Cutting board
Instructions:
- In stock pot combine 16 cups water, turkey, carrots, celery, onions, garlic, peppercorns and bay leaves. Boil over medium-high heat and then reduce heat to medium to let simmer. Spoon reside off from top.
- Simmer for 1 hour or until meat is detaching from its bone.
- Strain broth into another large pot, place turkey meat on a large plate and let cool until easy to handle.
- Pull of skin and meat from the bones and set meat aside.
- In large skillet (for gravy), melt butter over medium heat and cook onion, carrot and cayenne pepper for 5 minutes.
- Stir in flour and cook for 1 minutes, stirring well.
- Slowly pour in broth that was set aside in large pot and bring to a boil, while stirring.
- Simmer for 8 minutes or until slightly thickened.
- Place turkey meat and peas into a large casserole dish.
- Pour gravy sauce over and stir to combine. Let stand.
- Meanwhile, preheat oven to 425 degrees F, roll puff pastry on lightly floured surface.
- Place pastry on top of turkey mixture and cut a few slits on top.
- Place in oven and bake for 30 minutes or until golden brown and puffy. Let cool for a few minutes before serving.
A few tips:
- This recipe yields about 10 cups of stock. You can freeze remaining stock in an airtight container for up to 6 months! Simply defrost and prepare easy soup for the family for another night!

This turkey pot pie is very tasty! My family likes to be creative with thanksgiving dinners by changing up turkey recipes. Turkey thighs or drumsticks are especially juicy and is a great source of vitamin B3, zinc, iron and contains about 27g of protein per serving.
