Simple Blooming Vanilla Cheesecake

    Ingredients:
  • 2 eggs
  • 900g Cream cheese, room temperature
  • 120ml Whipping cream
  • 2 Tablespoons Ricotta cheese
  • 2/3 Cup butter, melted
  • 250g Graham crackers, crushed
  • 100g Superfine sugar
  • 3 tablespoons cornflour
  • 1/2 Teaspoon vanilla extract
  • zest of 1 lemon
  • zest of 1 orange

  • Cherry Compote:
  • 400g stoned cherries
  • 4 1/2 tablespoons Superfine sugar
  • 6-8 Shots whiskey
  • icing sugar, for dusting
Cookware:
  • 24cm springform cake tin
  • small pan
  • 2 Medium size bowls
  • Electric whisk
Instructions:
  1. Preheat oven to 350 degrees F.
  2. Grease the sides and the bottom of a 24cm springform cake tin.
  3. Mix your Graham cracker and butter in a medium size bowl. Layer the mixture at the bottom of the tin and press it as a base.
  4. cook for 10 minutes and then let stand until cooled down.
  5. Increase your oven heat to 400 degrees F.
  6. Mix the sugar and cornflour in a medium bowl. Add the cream cheese and beat with an electric Whisk, or beat manually until it is creamy. Beat the eggs in well and then gradually add the Ricotta cheese and Whipping cream. Beat until it is perfectly smooth, then add the vanilla, lemon and orange zest.
  7. Layer the mixture over the baked cookie base in the cake tin. Evenly layer out the surface.
  8. Put in the middle of the oven and bake for 40-45 minutes. the top will be golden brown.
  9. Remove and let cool for 3 hours. For a firm texture, leave it in the fridge until cold.
  10. Put cherries in a small pan and sprinkle icing sugar over. Add a splash of water.
  11. Put in the oven on medium heat and simmer them for 20 minutes. Add some whiskey over the cherries for taste.
  12. remove cherries from the oven and add a splash of water. Let cool and then top the cheesecake with the cherries and dust over everything with icing sugar.

A few tips:
  1. If you can get a hold of Double Cream (mainly just UK) then substitute the 120ml Whipping cream and 2 Tablespoons Ricotta cheese.
